It is that time again for Irish Beef Stew! I love this recipe. A lot of people make it with Peas and Carrots, but a good heart stew isn’t a good hearty stew without some celery in it!! I usually remember this recipe about this time of year, and make it every night for two weeks. It is so good, and so filling, and wonderful for leftovers! And, its kid friendly!
Irish Beef Stew
Ingredients
- 3 Tbsp Olive Oil
- 2 lbs cubed beef stew meat
- 1 medium onion, diced
- 3 cloves garlic, minced
- 12 ounces of beer (pale lager)
- 3 1/2 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 1/2 Teaspoons sugar
- 1/2 tesapoon paprika
- 1 bag of baby carrots, cut into thirds
- 3 tbsp all purpose flour
- 4 stalks celery, sliced
- Mashed Potatos
Instructions
- Heat oil in a large pot or electric skillet over medium - high heat. Season the beef. Brown meat on all sides & remove to plate
- Add onion to pot and reduce heat to low. Cook, stirring, until softened, 3 minutes. Add garlic, stirring for 1 minute.
- Pour in beer, add broth tomato paste, Worcestershire, sugar, paprika, and 1/2 tsp salt and pepper to taste
- Add the beef and simmer, about 1 to 1 hour, 45min
- Add carrots, celery and other vegetables and simmer until vegetables and meat are tender, about 45 minutes.
- Remove about 1 cup of liquid from pot and whisk in flour, then stir it back in. Bring to a gentle boil
- Serve over Mashed Potatoes!
