This past week, my son Hunter got sick with flu like symptoms. We were catering food to him that would keep him fed but wasn’t too much for a sick tummy. As the week went on, our kids got sick, one by one. And then… Tim and I got sick! I wanted to still make something that was yummy that our kids would like, because they were feeling better, but was sensitive to our tummies. You would think cheese wouldnt be good for someone who has flu symptoms, but it was AMAZING! This recipe is a go-to now for not only a “family of sick people” but for any cold day!
Cheesy Broccoli Soup
Ingredients
- 1 Small Onion, Diced
- 3 Strips of Bacon, Diced
- 1/4 Cup Flour
- 4 Cups of Warm Milk
- 1 Vegetable Bouillon Cube
- Fresh Broccoli, Cut into smaller pieces (I bought one bundle, that was plenty)
- 2 Cups Shredded Cheddar Cheese
Instructions
- Cook Bacon in a 4 quart pan until cooked.
- Remove from pan and drain on towel leaving fat in pan
- Cook onions until soft in pan
- Add Flour to the onion & bacon leftover mixture, stir well
- Mix in warm milk and bouillon cube, stir with whisk continually
- Add Broccoli, let mix come to a boil stirring frequently
- Reduce heat and cook until broccoli is tender.
- Remove from heat, stir in cheese until melted
- Serve!
