Italian Chicken Bake
I am always on the lookout for new, fresh and HEALTHY recipes! We found this one and just HAD TO TRY IT OUT! It was so yummy. I think what I may do differently next time is cut the chicken into long slices, chop the tomatoes, and then layer it the same way. Then, when it is done baking, serve it over rice. It seemed like you had a huge mouthful of chicken all at once! :)
Ingredients
- 3 to 6 Chicken Breasts
- Roma Tomatoes, 2-4 (Sliced, 2 Per Breast)
- Basil Pesto
- Mozzarella Cheese
Instructions
- Lay Chicken Breasts in Baking Dish Side by Side
- Cover with Pesto, depending on how much you like
- Lay two tomato slices on pesto/chicken
- Sprinkle Cheese
- Bake 400 degrees F for 30-40 min, or until no longer pink and juices run clear.
