Cheesy Chicken Broccoli
We love this super easy dish! Our kids devour it! It is so easy to make, and you likely have the ingredients in your cupboard.
You could also use instant rice, cook separate and combine at the end.
Ingredients
- 3 Tablespoons Extra Virgin Olive Oil
- 1/2 Medium Yellow Oven, Diced
- 1 lb Boness Skinless Chicken Breasts, diced
- 2 Cloves Garlic, Minced
- 1 Cup uncooked long grain white rice
- 2 1/2 cups broccoli florets, cut into bite sized pieces
- 2 12 cups of low-sodium chicken broth
- 2 Cups shredded extra sharp cheddar cheese
Instructions
- In a large skillet or pan, combine oniions in two tablespoons of olive oil over medium heat
- Add chicken, brown, then add garlic. Cook for an additional minute
- Push chicken to one side of pan and add 1 tablespoon extra virgin olive oil.
- Add uncooked rice, saute for a few minutes
- Add chicken broth and boil.
- Cooke chicken and rice covered for 12 minutes.
- Sprinkle broccoli evenly over chicken and rice mixture, stir
- Continue to cook until broccoli and rice are tender, 7-10 minutes
- Remove from heat, sprinkle in half a cup of cheese
- Top with remaining cheese, let sit till melted.
- Serve!
