This is a favorite in our family! I learned this from some great friends who live in North Carolina. It is a great southern dish, that I can even get my kids to eat. It’s a perfect way to use up your garden tomatoes and onions. It’s become such a comfort food to me!
Tomato Pie
Ingredients
- 4 large tomatos
- 2 vidalia onions
- extra virgin olive oil
- pie crust
- 1 cup mozzarela cheese
- 1 tbl oregano
Instructions
- Slice tomatoes and take all the seeds out. Pat dry with a towel to remove as much moisture as possible
- Slice onions
- Sprinkle 1/4 cup mozzarella in bottom of pie crust
- Layer onions and tomatoes into pie crust
- Drizzle with olive oil
- Top with mozzarella, oregano, and sprinkle with salt and pepper.
- Bake at 350 for 25 minutes.
