Lemon Pepper Chicken
I just LOVE this easy and simple lemon pepper recipe. You could also try this recipe with salmon as well! I have found that the lemon pepper spice just doesn't cut it, and it really isn't much more work to use real lemons and peppers!
This recipe works really well with baby garlic potatoes and a vegetable!
Ingredients
- 2-3 Boneless Skinless Chicken Breasts
- 1/2 Tsp Virgin Olive Oil
- 2 Lemons
- 4-6 Sprigs of Thyme
- Black Pepper
- 1/2 tsp of Salt
Instructions
- Preheat Oven to 425
- In a medium size bowl, Sprinkle Salt, drizzle olive oil and pluck the leaves of the thyme onto the chicken. Zest one lemon onto chicken. You could also squeeze some lemon juice onto the chicken as well. Toss so chicken is well and evenly coated.
- Place chicken on baking sheet and sprinkle black pepper on.
- Cook for 20-30min or until thermometer says 165 when placed through thickest part of chicken
- Zest another Lemon on chicken before serving
