Chicken Fajita Salad
We are always looking for healthy alternatives to our salads, and this is a MUST TRY! This Chicken Fajita Salad could also be served with sour cream and salsa!
Ingredients
- 1/4 Cup Lime Juice
- 1 lb boneless skinless chicken breasts, cut in strips
- 1 Cup (ea) Romaine Lettuce
- 1 tsp Chili Powder
- Optional Toppings: Cucumbers, Red & Green Peppers, Red Onion, Ranch, Croutons, Shredded Cheddar Cheese, Hard Boiled Eggs
Instructions
- Preheat Skillet
- Marinade Chicken in refrigerator in Lime Juice and Chili Powder for 20 minutes.
- Remove from refrigerator, and fry in skillet or frying pan until no longer pink. If you are adding peppers and/or onions, also fry those. Remove from Heat
- Add your toppings on your Romaine Lettuce.
