Blizzard Day! We are looking at a possible 18 inches of snow today! I am not quite sure if we will get close to that but we are sure getting a blizzard! Tim and I decided today was a good day to make these yummy pinwheels for a quick snack! Burritos do have carbs in them, so we wanted to make sure we loaded the mixture in them to make them super filling! Remember, on the Keto Diet you want to do 70% fat, 20% protein and 10% Carbs!
- 2 Chicken Breasts, Cooked / Grilled and Shredded
- 1lb Thich Cut Bacon, Cooked, Chopped
- 8oz Cream Cheese
- 1 Cup Shredded Cheddar Cheese
- 1/2 Packet Ranch Seasoning
- 4 Large Tortillas, Burrito Size
Instructions:
- Chop your chicken and bacon finely, I used the Ninja (the smaller the better)
- Mix your cream cheese and ranch seasoning together well.
- Spread your cream cheese on your burritos and top with the shredded bacon, shredded chicken and shredded cheese.
- Roll up your tortilla tightly
- Refrigerate to harden cream cheese mixture for roughly 40-60 minutes (not required, but recommended)
- Cut into 1 inch slinces (seam down) and serve!
