Have I mentioned yet that I am LOVING my new keto diet? Its been officially 5 days, and I am down 9lbs– The food is AMAZING!!
I usually fail at diets because they are “too inconvenient” — meaning the recipes call for things I dont know or are too advanced to make, you basically starve yourself, you have to “count calories” or you have to change your entire daily routine. However, this is not like any of those diets!
I wake up every morning and drink my Keto Coffee– I don’t typically eat breakfast because I have been doing that interment fasting from 7pm until around 11am or noon the next morning- (I am not a HUGE breakfast eater..) and then I have my lunch, around 2 I have my KETOgo, and then around 5/6 we do supper. The thing with keto is you want to eat 70% good fats during the day (I know, I thought that was awkward at first too but it totally makes sense now!) 20% protein and 10% carbs. So low carb, high fat. So throughout the day I will snack on my “fats” (try my fat bombs!)
So anyways, back to the recipe! Tonight we had Creamy Tuscan Chicken! I am not a huge chicken eater, because I tend to make it pretty dry, but this recipe is AMAZING! I LOVE love LOVE IT! The creamy topping for the chicken was PERFECT! And the best part? Super easy to make!
You will need a few ingredients to get started!
- 3 Boneless Chicken Breasts (we had enough sauce left over for a few more!)
- 2 Tablespoons Olive Oil
- 1 Cup Heavy Whipping Cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 cup Parmesan cheese
- 1 cup chopped spinahc
- 1/2 cup sun dried tomatoes
Instructions
- Add olive oil into a large skillet
- Cook your chicken on medium heat for 4-5 minutes per side or until no longer pink in the middle
- Remove chicken and set aside
- Add the chicken broth, heavy whipping cream, garlic powder, Italian seasoning, and parmeson cheese in the skillet until it starts to thicken.
- Add the spinach and sundried tomatoes and let simmer until your spinach is slightly wilty.
- Pour sauce over your chicken and serve.
