Since starting this diet, this is my FAVORITE recipe yet! Spinach Artichoke Dip is BY FAR my FAVORITE snack! But, unfortunately I haven’t tried any keto chip recipes yet so it hasn’t been on my list, UNTIL NOW! I made the YUMMIEST dip into a topper for chicken, and it is DELICIOUS!
This was SO simple and easy to make! In fact, tonight Tim and I were sitting down eating this yummy meal and Tim said, “Why didn’t we go on a diet sooner?!” and I was thinking the exact same thing!
You will need just a few ingredients!
- 10 oz can artichoke hearts, chopped
- 10 oz frozen chopped spinach, thawed and drained
- 4 oz cream cheese
- 4oz mayo
- 1 cup parmesan (separated into two 1/2 cups)
- 1 cup mozzarella (separated into two 1/2 cups)
- Minced Garlic or 3 Cloves Garlic
- 3-6 Chicken Breasts, cubed or cut into strips
First you will preheat your oven to 400 degrees. Cut your chicken into strips or cubes and put in a baking dish. Season with salt and pepper to taste. Bake chicken 15 minutes. While Chicken is baking, mix together spinach, artichokes, garlic, cream cheese, may, 1/2 cup parmesan and 1/2 cup mozzarella. Take the chicken out of the oven and cover chicken with spinach artichoke topping. Put oven on 350 and bake an additional 20 minutes. Remove from oven and top with rest of your parmesan and mozzarella cheese. Place back in the oven and broil on low until cheese is golden and bubbly!
