Tim and I have recently started this keto diet. Its not really a diet though, it is a new lifestyle! We have started changing the way we choose our foods, and for the better. We joined It Works because my friend shave had AMAZING results drinking KETO COFFEE! I drink it every morning to help boost my mood, sharpen my focus and of course, help put and keep me in ketosis!
Its always been hard for me to go on a diet because I always felt like I was starving myself and then bam, just like that I was back to greasy foods and soda. Pizza, was one of those comfort foods for me! So when I found this amazing recipe and found out that it was KETO APPROVED I was SOLD! And, its SO SIMPLE!
When you read the title, did you think, how the heck can you make a zucchini into a pizza, and still make it taste good? I felt the same way! Honestly, I was like YUCK. But I am also at this point in my life where I am into trying new things and this is definatly on my list to make again. And, as an added bonus, the kids and husband loved it too!
So you really only need zucchinis, pizza sauce or organic marinara sauce, mozzarella cheese, and pepperonis. However, you could add mushrooms, peppers, olives, etc!
It was very simple to make too! I took a spoon and “gutted” out the zucchini insides and put them to the side for later. The zucchinis then turn into a “boat.” Add in a tiny amount of pizza sauce (you don’t need much) mozzarella cheese and pepperonis and bake! You only need to bake it for 30-40 minutes at 350. They had just the perfect amount of crunch!
While that was cooking, we took grass-fed butter and sautéed the insides of the zucchini for a little snack, and it was YUM!
Ingredients
- Zucchini (cut in half)
- Pizza Sauce or Organic Marinara Sauce
- Mozzarella Cheese
- Pepperoni
Instructions
- Remove the insides of your zucchini with a spoon. Set aside.
- Place your halved zucchini on a baking sheet.
- Using a spoon, spoon in a small amount of pizza sauce. Use as desired
- Top with Mozzarella & Pepperoni.
- Bake at 350 for 30-40 minutes
- While your zucchini pizza is baking, put a tad bit of grass-fed butter in a pan and satee your zucchini. Eat as a snack or serve with your pizza.
- Serve!
